My favorite flavor combination in the world is cilantro and lime! Yummmmm! You may have noticed by now that I tend to cook very “rustic” dishes, which is a fancy way to say throwing a bunch of stuff together. Tacos are the perfect way to “throw a bunch of stuff together”. There are a thousands of different flavor combinations. They are also a great way to skip meat for a day or two.
Pickled Red Onions and Jalapeno
- 1 red onion
- 2 jalapenos
- 1 1/2 c water
- 1 1/2 c white vinegar
- 1 T salt
- 1 T sugar
- 2 bay leaves
- 6 whole black peppercorns
- 2 t red pepper flakes
- Thinly slice the onion and jalepeno. Add them to two separate jars with lids
- Add water and vinegar to saucepan, Bring to a boil and add the other ingredients. Boil for 2 minutes then pour the hot liquid over the vegetables.
- Cool and store in the refrigerator for a month, if they last that long!
