Well, the first week of school lunches were a little crazy. My kids came home without eating MOST of their food! We learned lunch is only 20 minutes long. Yike! My kids like to linger over their food…but, they really like to talk. So, after our “you must eat your food!” lecture, things have gotten a little better. 😉
I’m a “real-food” eater and sometimes that makes things kinda difficult. We usually don’t have boxes of crackers, chips or cookies around to pull out when you are starving. (Not that we are super healthy eaters, I would just rather have home made junk food rather than store bought. :)) So, lunch making took me way tooooo long the first week!
This weekend, I did a little precooking for the school lunches. It actually took me less than an hour because I was also making supper at the same time. This stuff is so easy to make that it really took no effort at all! Here are some easy ideas to make your lunch packing a little healthier and a lot quicker!
Because I am a moron…I don’t have a picture of the roasted chicken. Well, it wasn’t roasted, it was smoked on the grill. And, slathered in a dry rub. Oh, my! This morning I took it out to make a chicken sandwich for my boy…and it smelled yummy!!
So, after having all these basics, lunches were a snap! I added some sliced apples with dulce de leche dip one day, baby carrots another day. I always had a granola bar just in case of an emergency starvation situation.
