Now that it is summer and I need to wear a swimsuit without scaring everyone off the beach, I’ve got to eat salads again! 🙂 I love salads because they are so amazingly versatile. No matter what craziness is left in the fridge at the end of the week, I can almost always throw together a wonderfully balanced salad.
One thing that deters me from eating salad everyday is the prepping, so I have found it works for me to prep for a few days at a time. Tear the lettuce into bite sized pieces, wash and spin in the salad spinner. I like to lay it out on the cutting board to let it thoroughly dry. Then, I store it in the refrigerator in the salad spinner. Easy to grab and use. When making your salad always toss the lettuce in dressing, vinegar or lemon/lime juice first.
Now salad dressings. They are pretty fantastic as well. You can whip them up in minutes, they require no cooking and only a few ingredients to make a salad really pop. But, if you purchase them in the store, they almost always have thousands of calories and tons of fat. I don’t want to derail my healthy salad with that!
Here are a few healthy DIY salad dressing recipes:
This salad features chopped pears, sunflower seeds and cilantro. The dressing is simply lime juice and pepper.
This salad uses shrimp, thawed & chopped, avocado & tomatoes. The dressing is simply lime juice and Sriracha sauce.
Another option for making a healthy dressing is to make your own flavored vinegar by steeping habanero or jalapeño peppers in vinegar for a few days, up to a month. You can do the same with chive flowers as well!
