Every morning I used to wrestle my Kitchen-Aid blender into submission and force it to cough out a smoothie. But, with all the greens I added, it never ended up very smooth. My husband tired of hearing my rants from the kitchen 😉 and bought me a Vita-Mix for Christmas. I use it multiple times a day and absolutely love it.
The problem with the blenders is that they are so dang expensive! Of course, hubs found a great deal online. He purchased a refurbished model from the factory and paid half of what they are asking for the new models. It comes packaged from the factory, brand new. There is never a reason not to purchase a refurbished model, in my opinion. They remake the whole thing! It’s an awesome bargain.
The reason I am going on and on about the Vita-Mix is because this yummy tomato soup recipe in it. This is my go-to lunch. I generally make a huge batch and eat on it all week long. It’s super easy in my Vita-Mix. I throw it everything in at the same time, set it on the soup setting and it’s done it a couple minutes. I love eating a healthy, warm lunch that takes 2 seconds to make. Thank you, Vita-Mix!
- 30 oz. can diced Tomatoes
- 2 cups Chicken Broth (or vegetable)
- 1/2 small onion
- 2 chipotle chilies, canned
- 1 tsp salt
- 1/4 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp chipotle seasoning (& whatever else sounds good!)
- 1/4 cup half & half (optional)
- Throw all of these ingredients into your blender and blend until pureed.
- Heat up on the stovetop or in microwave.
- I like to top with a couple basil leaves and pesto.
If you are working off the pounds, this is a great soup to fill you up + giving you some great nutrition. And, it’s so easy to make, you won’t be tempted to head down to the cafeteria and grab a danish. 😉
