It’s so durn cold outside. Here is a deliciously warm and tasty ham & split pea soup to warm up with! Enjoy! ***extra bonus points for being super easy. Your family will think you are Superwoman when they come home to this delicious soup. Which of course, you are.
I am obsessed with the slow cooker these days. The slow cooker gives a depth of flavor that comes from undisturbed cooking which traps in the steam, no stirring or skimming required. This week I made ham and split pea soup in the slow cooker. It was so easy!
I bought a 1 1/2 pound ham hock, threw in a bit of pulled apart leftover ham.
I used a combination of pink and green lentils.
Did a rough chop of my meats and veggies and seasoned them with a healthy dose of S&P.
And, added four cups of homemade vegetable broth that I had in the freezer and three cups of water. I didn’t follow the recipe exactly, but generally.
I put this together before I went to bed and woke up to the house smelling scrumptious! To finish the soup, I scooped out a bowl of the chunkier bits like carrots, ham, onions and set aside while I puréed the rest. I added the chunkier veggie back in and gave it a try. Perfect and so easy. No cream required. (But, you can still add some cream when no one is looking. I won’t tell. 😉
This is an easy dish for feeding a crowd on a cold day. If you don’t have a crowd, then freeze some of the soup to pull out of the freezer, when you need a cozy soup to slurp.
- 1 (16-ounce) package dried green split peas, rinsed
- 1 meaty ham bone, 2 ham hocks or 2 cups diced ham
- 1 cup sliced baby carrots
- 1 cup chopped yellow onion
- 2 ribs celery plus leaves, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 6 cups chicken broth
- Layer ingredients in slow cooker in the order given, adding the broth last. Do not stir ingredients. Cover and cook in crockpot on high for 4—5 hours, or on low 8—10 hours, until peas are very soft and ham falls off the bone.
Tip Jar: Buy and use an immersion blender vs. a usual blender. They are the best! They save you from messy spillage of soup, or burning of arms.
