Pickled Hard-Boiled Eggs
- 6 eggs
- Apple Cider Vinegar
- Chili Flakes
- Large Ball Jar

- Place 6 eggs in a saucepan and cover with cold water, bring to a boil. Turn off burner, cover and let rest for 10 minutes. Remove from heat and cover again with cold water. Carefully crack the eggs and peel under the water, then let them sit to cool and dry. Once cooled, put them into a ball jar awaiting the brine.
- Pickling Brine
- Combine the apple cider vinegar, peppercorns, chili flakes, sugar, salt and water in a medium saucepan over high heat, bring to a boil, simmer for 10 minutes, remove from heat and cool to room temperature. Using a fine sieve or mesh spider, strain the spices, slowly pour the cooled, strained brine over the eggs in the jar until it's full. Transfer to the fridge and allow to sit until desired flavor is achieved — at least 3 days. Keep refrigerated using within 3 weeks.
